Protein-rich pecans are loaded with antioxidants, magnesium, zinc, iron, and vitamin B6 just to name a few!
My Stepdad calls them brain food because all the minerals found in pecans promote proper brain function.
Pecans also help reduce inflammation and heart health with it’s healthy fats.

When consumed in moderation, dark chocolate is a decadent treat you can enjoy without worry.
Like pecans, it is also full of antioxidants, minerals, and fiber.

How To Make Chocolate Covered Pecans
First of all gather the ingredients and supplies you will need.
Ingredient Checklist:
Whole pecan halves. I like to get the big 2lb bags of pecan halves from Costco when I’m there, or sometimes I will order tree nuts in bulk from Azure Standard.
Chocolate Chips (dark or milk, your choice).
Coconut oil or butter (your choice if you would like to use any).
Supplies:
Wooden spoon.
Spatula.
Cookie sheet.
Silicone baking mat, parchment paper, or wax paper.
Double boiler or a microwave-safe medium bowl.
Instructions:
1-Start out by preheating the cast iron skillet on the stove top on low heat. If you don’t have cast iron, a regular skillet will work.
2-Have cookie sheet ready lined with your choice of silicone baking mat, parchment paper, or wax paper.
3-Separate pecan halves from any broken pecan pieces.
4-Toast pecan halves in skillet. You can choose to add a little coconut oil or a tablespoon of butter to add extra flavor, but neither one is necessary. Stir frequently to avoid burning.
Set aside to cool.
5-Melt the dark chocolate chips (or milk chocolate chips). If you don’t have a double boiler, simply put water in a small/medium sauce pan and set water to a gentle simmer. Put a glass or ceramic bowl on top of the sauce pan and drop the chocolate chips in it stirring frequently.
If you choose to melt them in the microwave make sure to do it in short increments and stir in between until chocolate is smooth.
6-Drop one or two pecans at a time in the melted chocolate and using the slotted spoon, take each pecan out letting all excess chocolate drip.
Place dipped pecans on the prepared baking sheet in a single layer.
7-Let cool at room temperature for at least one hour.
Recipe Variations:
You can really play around with this pecan recipe by adding or substituting ingredients.
Instead of toasted pecans you can use macadamia nuts or almonds.
Different types of chocolate would be fun to try too, like for example….white chocolate, or a little bitter dark chocolate mixed with peanut butter.
One of my favorite ways to enjoy chocolate covered pecans is with a bowl of vanilla or coffee ice cream, yumm!
