Ingredients
  

  • 1 Tbsp finely chopped red onion
  • 1 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • Salt and Pepper To taste
  • 1/2 cup chickpeas
  • 3/4 cup cubed cucumber peeled
  • 4 Tbsp feta cheese crumbled
  • 1/2 cup cherry tomatoes halved
  • 1 cup mixed baby greens

Equipment

  • Mason jar (16 oz.)
  • Measuring cups
  • Measuring spoons

Method
 

  1. Add onion, olive oil, white wine vinegar, salt and pepper to the bottom of the mason jar and mix well.
  2. Layer the rest of the ingredients in the order listed.
  3. Put lid on and store in the fridge for up to 5 days.
  4. When ready to eat, turn the jar upside down for 3 minutes and then eat right out of the jar.
