It’s almost summer! My absolute favorite time of the year, and what screams summer louder than ice cream! I thought it would be fun to share some interesting facts about ice cream along side the yummiest homemade strawberry ice cream recipe and fun activities you can do with the kids this summer.

The month of July is National Ice Cream Month in the United States thanks to Senator Walter Dee Huddleston who introduced the resolution. President Ronald Reagan signed the bill into law in 1984.

National Ice cream day is celebrated every third Sunday of July.

It takes 12 gallons of milk to make one gallon of ice cream.

Whipped cream is the most popular ice cream topping, with hot fudge being a close second.

The most popular flavor of ice cream among the American people is chocolate ice cream. Vanilla ice cream comes in second place and strawberry in third.

The average American eats 5.5 gallons of ice cream every year.

Interesting Fun Facts About Ice Cream During Hard Times In History

During WWI to keep the morale of the soldiers up, the US Navy turned a refrigerated barge into an ice cream making facility. They could produce ten gallons of ice cream every seven minutes and store up to 2,000 gallons on the barge.

During World War II European countries banned ice cream because they said it was a wasteful use of sugar.

According to the USDA dairy products like milk, butter, and ice cream sales increased by three pounds per person during the 2020 world pandemic. The American people were finding comfort in the sweet treat amidst uncertainty.

Although not as popular today, ice cream trucks were all the rage after WWII when the ice cream industry boomed. Ice cream trucks were much cheaper to operate especially during the Great Depression era when ice cream parlors were too much of a luxury.

Dairy Free Strawberry Ice Cream Recipe

Supplies Needed:

  • One pound of organic strawberries
  • 15 dates
  • 2 cans of coconut milk
  • 3/4 cup of melted coconut oil
  • 3 egg yolks
  • 2 Tablespoons of vanilla

Recipe Instructions:

  1. Start by melting the coconut oil in a sauce pan on the stove on low heat, and removing from the heat as soon as it’s completely melted.
  2. If the dates aren’t pitted already go ahead and take the pit out and put them in the blender.
  3. Add the two cans of coconut milk, one pound of strawberries, three egg yolks, and 3 tablespoons of vanilla to the blender.
  4. After you’ve given the coconut oil a minute or two to cool down and it to the blender as well.
  5. Blend all ingredients for at least ten minutes. I know it sounds like a long time to blend but just trust me, you want everything blended very very well. The ice cream will come out so creamy.
  6. While the blender is going, pull out the ice cream maker and turn it on.
  7. Pour the the ingredients from the blender into the ice cream maker machine as the freezer bowl spins. Leave it going for 20 to 30 minutes until it starts to harden. It usually will start coming out the top when the ice cream is done.

Dairy Free Strawberry Ice Cream

Dairy free, healthy, and easy to make homemade strawberry ice cream. Dessert you don't have to feel guilty about!

Ingredients

  • 1 pound organic strawberries
  • 15 dates
  • 2 cans coconut milk
  • 1/2 cup melted coconut oil
  • 3 egg yolks
  • 2 tablespoons of vanilla extract

Instructions

    1. Start by melting the coconut oil in a sauce pan on the stove on low heat, and removing from the heat as soon as it's completely melted.


    2.If the dates aren't pitted already go ahead and take the pit out and put them in the blender.


    3.Add the two cans of coconut milk, one pound of strawberries, three egg yolks, and 2 tablespoons of vanilla to the blender.

Notes

I find if all the ingredients are at room temperature like the eggs and dates (I keep them in the fridge) the ice cream will come out very creamy and it will keep the coconut oil from clumping up in the blender.
